Sự lựa chọn của người tiêu dùng đối với thực phẩm đã thay đổi. Người tiêu dùng ưu tiên lựa chọn thực phẩm không chỉ an toàn mà còn bổ dưỡng. Ngày nay, họ thích ăn những thực phẩm giúp cải thiện sức khỏe và giảm thiểu các vấn đề sức khỏe liên quan đến dinh dưỡng. Gạo là thực phẩm chính ở nhiều quốc gia, nhưng vấn đề nổi cộm hiện nay là gạo thiếu hụt khoáng chất. Gạo đứng thứ hai trong số các loại ngũ cốc được tiêu thụ trên toàn thế giới. Gạo thiếu sắt (Fe), kẽm (Zn) và đây là các vi chất dinh dưỡng quan trọng đối với trẻ sơ sinh, nam giới và phụ nữ. Việc tăng cường gạo với sắt và kẽm sẽ giúp giảm thiểu các rối loạn do thiếu dinh dưỡng ở con người. Nghiên cứu hiện tại nhằm giới thiệu gạo giàu dinh dưỡng cho người tiêu dùng và đồng thời khuyến khích các tổ chức tăng cường thực phẩm chuyển hướng tập trung vào tăng cường gạo. Ở các quốc gia Nam Á, sự thiếu hụt vi chất dinh dưỡng, đặc biệt là thiếu hụt Fe và Zn, rất phổ biến. Gạo, do được sử dụng như một thực phẩm chính, có thể được sử dụng như một phương tiện vận chuyển vi chất dinh dưỡng từ các nguồn thực vật đến con người. Do đó, việc tăng cường gạo với các vi khoáng có thể là một phép màu cho việc xóa sổ các bệnh tật liên quan đến dinh dưỡng ở con người.
