Bài báo cung cấp cái nhìn tổng quan về axit phytic trong thực phẩm và tầm quan trọng của nó đối với dinh dưỡng của con người. Bài viết tóm tắt các nguồn phythat trong thực phẩm và thảo luận về các vấn đề liên quan đến hàm lượng axit phytic/phytate trong bảng thực phẩm. Dữ liệu về lượng tiêu thụ axit phytic được đánh giá và lượng tiêu thụ axit phytic hàng ngày phụ thuộc vào thói quen ăn uống cũng được đánh giá. Quá trình phân hủy phythat trong quá trình tiêu hóa được tóm tắt, cơ chế tương tác của phythat với khoáng chất và nguyên tố vi lượng trong chime tiêu hóa được mô tả và con đường thủy phân inositol phosphate trong ruột được trình bày. Kiến thức hiện tại về sự hấp thụ phythat được tóm tắt và thảo luận. Các ảnh hưởng của phythat đến khả năng sinh khả dụng của khoáng chất và nguyên tố vi lượng được báo cáo và sự phân hủy phythat trong quá trình chế biến và bảo quản được mô tả. Các hoạt động có lợi của phythat trong chế độ ăn uống như ảnh hưởng của nó đến quá trình canxi hóa và hình thành sỏi thận cũng như việc giảm glucose và lipid trong máu được báo cáo.
