Khi bổ sung chất chống oxy hóa trong chế độ ăn, nồng độ tổng COPs huyết thanh (0.44 µg/ml) cho thấy mức độ tương tự như những con chuột ăn chế độ ăn kiểm soát. 7β-hydroxycholesterol, được hình thành không qua enzym qua quá trình oxy hóa cholesterol trong sự hiện diện của các loài oxy phản ứng, cho thấy giá trị thấp hơn một chút ở những động vật được bổ sung chất chống oxy hóa so với những con chuột kiểm soát. Nghiên cứu này xác nhận tầm quan trọng của các chất chống oxy hóa trong chế độ ăn như những yếu tố bảo vệ chống lại sự hình thành oxysterols.
