STUDY ON MODIFICATION OF RED PUMPKIN (Cucurbita moschata) STARCH TO CREATE RESISTANT STARCH USING ENZYME
TRA VINH UNIVERSITY JOURNAL OF SCIENCE; p-ISSN: 2815-6072; e-ISSN: 2815-6099 - - Trang - 2024
This study aims to determine the parameters of the enzymatic hydrolysis process of red pumpkin starch to increase the resistant starch content in the material. The liquefaction stage was designed with two factors: α-amylase concentration and different times. The results of the α-amylase liquefaction process showed that the highest reducing sugar content was 14.92% at an α-amylase concentration of 11 U/g and time of 50 minutes, with a fixed starch: water ratio of 1:4. The saccharification experiment was carried out based on a multivariate model using the Central Composite Design method and yielded expected results, with variance analysis in the regression model showing significance (p < 0.05). The reliability of the model R2 = 0.997 showed that the regression model was suitable for the dataset with 99.7% accuracy. CV = 2.08% indicated that the accuracy and reliability of the experiments were good. At a glucoamylase concentration of 112.424 U/ml, a temperature of 48.590oC, and a time of 179.732 minutes, the highest resistant starch content reached 35.968%. Solubility and swelling increased with temperature: at 90oC, the solubility of native starch and modified starch were 12.12% and 68.85%, respectively, while swelling of native starch was 6.77%, and modified starch achieved 3.39%. Thetransparency of native starch was 5.37% T, while modified starch achieved 2.17% T.

AN ANALYSIS OF TECHNICAL – FINANCIAL EFFICIENCY AND BENEFITS OF COLLECTIVE ECONOMIC PARTICIPATION: A CASE STUDY OF THE ROTATION RICE-SHRIMP MODEL IN SOC TRANG PROVINCE
TRA VINH UNIVERSITY JOURNAL OF SCIENCE; p-ISSN: 2815-6072; e-ISSN: 2815-6099 - - Trang 80-89 - 2021
The forms of collective economic production organizations (CEPOs) are increasingly encouraged, especially for small-scale producers. The study was carried out from March to July 2021 through interviews with 45 riceshrimp farming households, including 25 households belonging to the CEPOs and 20 individual households in the Soc Trang Province aiming to evaluate the financial performance of the model. The research results show that the farming scale of the CEPOs’ households is larger; the stocking density is lower; but the yield is higher than that of the counterparts (591.5 kg shrimp and 6.36 ton of rice/ha/crop, compared to 385.1 kg of shrimpand 4,23 ton of rice/ha/crop, respecitively). There are no statistically significant differences in the cost indicators, but the indicators of financial performance of the CEPOs’ households are statistically significantly higher than that of individual households (profit reaching 45.9 mill.VND for shrimp and 54.1 mill.VND/ha/crop for rice, double that of individual households). Shrimp CEPOs play an important role in gathering production through input sumply contracts, technical support, preferential policies on capital and contributing to job creation and income enhancement for shrimp farming household.

INITIAL SURVEY OF HEAVY METAL CONCENTRATIONS IN PADDY SOIL AND RICE PLANTS (Oryza sativa L.) NEAR AND FAR FROM OPEN LANDFILL IN SOUTHERN VIET NAM
TRA VINH UNIVERSITY JOURNAL OF SCIENCE; p-ISSN: 2815-6072; e-ISSN: 2815-6099 - - Trang 48-59 - 2020
The concentrations of heavy metals in soil and rice plants around the landfill area in Dong Thang commune, Co Do District, Can Tho City, Viet Nam needed to be assessed for environmental pollution. Soil samples were collected from four sites (three sites S1, S2, S3 near and one site S4 far away from the landfill area) at soil depths of 0 to 25 and 25 to 50 cm. The rice and soil samples were simultaneously collected at the same locations for analysis of heavy metals. The heavy metals Mn, Zn, Cu, Cr, Ni, Pb and Cd were analyzed using atomic absorption spectroscopy. Six heavy metals including Mn, Zn, Cu, Cr, Ni, and Pb were detected and ranged from 12.3 to 291.0 mg/L for the top soil and 11.2 to 370.0 mg/L for 25 to 50 cm soil layer. However, concentrations of Ni, Cu, and Pb in soil tended to decrease while Mn, Zn and Cr tended to increase with an increase of soil depth near the landfill. A similar tendency of heavy metal concentration with depth was found at S4 except for Cu. The decreasing order of the selected heavy metals concentrations in the two soil layers at near the landfill was Mn>Zn>Ni>Cr>Cu>Pb and these concentrations of heavy metals were within the limits of QCVN 03-MT: 2015/BTNMT and Canadian Council of Ministers of the Environment (CCME, 2007). The result of the bioaccumulation factor (BAF) in rice plants showed that the selected heavy metals were accumulated more in the root rather than the stem-leaf and grain. Mn was accumulated dominantly in both root and stemleaf, while Zn, Cu, and Pb only accumulated in the root. Thus, result of this study suggests that is essential to collect and treat the heavy metals in the leachate properly to minimize the distribution of heavy metals to the paddy soil environment.
