Vi khuẩn axit lactic (LAB) thường được sử dụng như các giống khởi động, probiotics, để sản xuất axit lactic và các hợp chất hữu ích khác, thậm chí còn được sử dụng như các chất bảo quản tự nhiên. Tuy nhiên, để có thể được sử dụng trong bất kỳ sản phẩm thực phẩm nào, LAB cần phải tồn tại trong các điều kiện khác nhau mà chúng gặp phải trong môi trường và trong quá trình chế biến. Việc hiểu rõ những cơ chế này có thể cho phép định hướng hóa sinh của LAB với những tác động tích cực tiềm năng cho ngành công nghiệp thực phẩm.
