Nói chung, người ta chấp nhận rằng phẩm màu Monascus chủ yếu nằm trong tế bào, bao gồm cả phẩm màu nội bào và bề mặt tế bào. Hiểu lầm lâu dài này đã được xác nhận trong công trình hiện tại. Việc sản xuất phẩm màu tinh thể ngoại bào bằng văn hóa chìm của Monascus sp. đã được xác nhận thông qua quan sát kính hiển vi và thu thập phẩm màu Monascus từ môi trường ngoại bào bằng phương pháp lọc màng trực tiếp. Theo dõi sự thật mới này, hoạt tính sinh học của nấm mycelia như một chất xúc tác sinh học toàn bộ cho tổng hợp sinh học và phân hủy sinh học phẩm màu Monascus đã được kiểm tra chi tiết trong cả dung dịch nước và dung dịch micelle surfactant không ion. Dựa trên các kết quả thí nghiệm đó, văn hóa huyền phù tế bào trong môi trường nước đã được phát triển như một chiến lược mới để tích lũy nồng độ cao phẩm màu Monascus. Do đó, việc cung cấp glucose trong quá trình văn hóa chìm trong môi trường nước đã được thực hiện thành công và nồng độ phẩm màu Monascus màu cam cao gần 4 g/L đã đạt được.
