New melibiose-utilizing yeasts, isolated from “alpechín”

In a study of the yeasts associated with “alpechín” two new species and one new variety were found. These are described asTorulopsis salmanticensis, Saccharomyces norbensis andPichia vini, var.melibiosi. In addition to the physiological properties usually utilized for characterization of yeasts the following properties were also examined: occurrence of β-fructosidase, utilization of lysine as a source of nitrogen, utilization of a mixture of amino acids as sole source of carbon, and resistance to actidione.
