Sự hư hỏng do nấm gây ra là một vấn đề nghiêm trọng đối với ngành công nghiệp thực phẩm vì nó làm cho các sản phẩm không thể chấp nhận để tiêu thụ. Khía cạnh quan trọng nhất của sự hư hỏng thực phẩm là sự hình thành mycotoxin, có thể gây ngộ độc thực phẩm.
