Các phân đoạn dung môi từ chiết xuất methanol của cây hương thảo được thu được bằng cách chiết xuất liên tiếp với n-hexane, chloroform, ethyl acetate, butanol và nước. Phân đoạn ethyl acetate (EAF) chứa một lượng polyphenol và flavonoid đáng kể, cũng như mức độ hoạt động quét gốc tự do alkyl và 2,2′-azino-bis(3-ethylbenzthiazoline-6-sulphonic acid) (ABTS) cao. Hoạt động này đã hướng dẫn quá trình phân tách và tách chiết bằng sắc kí lặp lại trên gel silica, RP C18 và Sephadex LH-20, dẫn đến việc phân lập sáu hợp chất từ EAF. Các phép đo quang phổ 1H NMR, 13C NMR, 2D NMR, MS và IR đã xác định các hợp chất là axit caffeic (1), axit rosmarinic (2), ester methyl axit rosmarinic (3), luteolin (4), apigenin (5) và hispidulin (6); sự định lượng bằng sắc ký lỏng hiệu năng cao (HPLC) đã được sử dụng để xác định nồng độ trong EAF. Trong số sáu hợp chất được phân lập, ester methyl axit rosmarinic thể hiện hoạt tính quét gốc tự do cao nhất chống lại di(phenyl)-(2,4,6-trinitrophenyl) iminoazanium, gốc alkyl và ABTS.
