Trong nghiên cứu này, các loại chất thải thực phẩm khác nhau được sử dụng làm nguồn protein chính thay thế bột cá trong thức ăn cho cá nhằm sản xuất cá chất lượng (nuôi đồng nhiều loại cá nước ngọt khác nhau). Trong khoảng thời gian từ tháng 10 năm 2011 đến tháng 4 năm 2012, nồng độ Hg trong nước, chất rắn lơ lửng và trầm tích của ba ao thí nghiệm cá nằm tại trang trại hữu cơ Sha Tau Kok đã được theo dõi, và kết quả tương tự hoặc thấp hơn so với các giá trị phát hiện tại các ao cá thương mại ở khu vực Đồng bằng Châu Giang (PRD) (bằng cách so sánh dữ liệu của các nghiên cứu trước và hiện tại).
