Nghiên cứu nhằm mục đích đạt được sản xuất nisin tế bào đặc hiệu cao bằng cách thay đổi chu kỳ môi trường của Lactococcus lactis N8 và LAC48. Mức độ sản xuất nisin cao nhất đạt được với chu kỳ 120 phút, nhưng sản lượng tối đa không ổn định. Trong các chu kỳ ngắn hơn (30 và 60 phút), các tế bào có thể duy trì trạng thái sản xuất cao cho đến khi kết thúc quá trình lên men (28 và 14 chu kỳ). N8 sản xuất nhiều nisin gấp 19 lần và LAC48 gấp 15 lần khi thay đổi chu kỳ môi trường so với không thay đổi chu kỳ ủ.
