Các loại phô mai kiểu Mexico làm thủ công thường được sản xuất từ sữa tươi, không chỉ mang lại hương vị phong phú mà còn sự đa dạng các chủng vi khuẩn axit lactic (LAB) đi kèm. Enterococcus faecium UQ31 được phân lập từ phô mai panela và sản xuất các chất ức chế giống bacteriocin (BLIS) có hoạt tính chống Listeria mạnh mẽ. Một quy trình tinh chế hấp thụ - desorption xử lý bằng pH đã được cải tiến đã dẫn đến (sau SDS-PAGE) hai dải cho thấy hoạt tính kháng khuẩn, trong đó phần lớn hoạt tính tương ứng với dải có trọng lượng phân tử ước tính khoảng 7.5 kDa. Các BLIS do E. faecium UQ31 sản xuất có khả năng chịu nhiệt, ổn định trong điều kiện bảo quản môi trường và hoạt động trong khoảng pH 5–9.
